In recent years America's food culture has become more modernized thanks to culinary blogs and celebrity chefs. That being said, our traditional cultures do not rival those of other countries around the world, which is due to our infatuation with trends. In this amazing melting pot of cultures we are consumed with the newest trend, whether it's sliders or an all-organic vegan healthy choice cuisine. We often lose sight of uncomplicated, old school recipes that bring you great things like
charcuterie, homemade bread, curing, and pickling. These are just a few simple culinary delights that we have pushed aside to make room for the newest craze.
Charcuterie is truly one of the lost culinary arts. It was invented by the Romans to cure and store meats and vegetables therefore keeping them preserved and HEALTHY! The F.D.A. has implemented such strict restrictions on these culinary specialties that we cannot import them or even make our own in restaurants. The true lovers of this craft have gone as far as starting underground
charcuterie shops, much like the speakeasies during prohibition. Here at Liquid Assets, we have begun crafting our own creation of
charcuterie, such as
bresaola (air dried beef tenderloin) and
Lomo (spicy salt cured pork tenderloin). Soon a simple cut of meat transformed by love, salt, and patience will be available for everyone to taste!
This world we live in has become complicated enough, why make our food complicated? There are so many effortless foods and techniques that can put a smile of your face. Try making a loaf of homemade bread and enjoy the satisfaction when you taste what you have created. Why not test your hand at making your own pickles or mozzarella? You will be surprised how easy it is!
